TOFU CHOCOLATE MOUSSE

INGREDIENTS:
½ block (about 170g) silken tofu, drained
2 tbsp cocoa powder
2 tbsp maple syrup (or honey)
30g dark chocolate, melted
½ tsp vanilla extract
A pinch of salt
Optional: 1 tbsp milk or non-dairy milk (if needed for blending)
INSTRUCTIONS:
In a microwave or over a double boiler, melt the dark chocolate until smooth. Let it cool slightly.
Add the tofu, cocoa powder, maple syrup, melted chocolate, vanilla extract, and salt to a blender or food processor. Blend until completely smooth. If the mixture is too thick, add a little milk.
Transfer the mousse into serving cups and refrigerate for at least 30 minutes to set.
Garnish with berries, whipped coconut cream, or grated chocolate.
