TOFU CHOCOLATE MOUSSE

I AM ALWAYS BEING ASKED FOR HEALTHY DESSERT OPTIONS AND THIS TOFU MOUSSE IS FOREVER A BIG HIT. THIS RECIPE COMBINES NUTRIENT-DENSE INGREDIENTS WITHOUT RELYING ON HEAVY CREAM, REFINED SUGAR, OR BUTTER. NOT ONLY DOES IT TASTE DELICIOUS IT PROVIDES A WHOLE HOST OF HEALTH BENEFITS INCLUDING:

  • ½ block (about 170g) silken tofu, drained

  • 2 tbsp maple syrup (or honey)

  • 30g dark chocolate, melted

  • ½ tsp vanilla extract

  • A pinch of salt

  • Optional: 1 tbsp milk or non-dairy milk (if needed for blending)

INSTRUCTIONS:

  1. In a microwave or over a double boiler, melt the dark chocolate until smooth. Let it cool slightly.

  2. Add the tofu, cocoa powder, maple syrup, melted chocolate, vanilla extract, and salt to a blender or food processor. Blend until completely smooth. If the mixture is too thick, add a little milk.

  3. Transfer the mousse into serving cups and refrigerate for at least 30 minutes to set.

  4. Garnish with berries, whipped coconut cream, or grated chocolate.
